Shakshuka made easy

This fantastic and easy sauce can be made in advance and used for fast meal preparations such as this Shakshuka For One recipe. Particularly handy when cooking smaller meals for one or two people, one jar kept in the fridge means instant pasta dishes, soups, oven bakes or a condiment to mix with cheese for toasted sandwiches and burgers. Shakshuka for One

  • Chill Sauce

Instructions

  1. Add oil to a frying pan and saute pepper slices over medium heat until starting to caramelize and gain a little charred colour. The longer you caramelise, the deeper the flavour will be.
  2. Add cumin along with the Magic Tomato Sauce and a splash of water, cook for 1 minute.
  3. Add the baby spinach, distribute evenly among the sauce (add another splash of water if the sauce is getting dry), make 2 gaps in the sauce, then crack in the eggs and season with salt. Turn heat down a little and cover the pan with a lid. Let eggs cook away gently until the white has set and the yolk is still soft.
  4. Toast bread and pour a little olive oil over it.
  5. When the eggs are ready, remove the pan from the stove. Garnish with dill. Serve shakshuka in the pan along with toasted bread. Yoghurt and chill sauce would also be a nice side option.
