This fantastic and easy sauce can be made in advance and used for fast meal preparations such as this Shakshuka For One recipe. Ingredients
- 2 eggs
- 250ml Magic Tomato Sauce, recipe here
- 1/3 red pepper sliced thinly
- 3/4 tsp ground cumin
- Splash water
- Handful baby spinach
- Salt and pepper
- Dill for garnish

- Toasted sourdough bread
- Youghurt
- Chill Sauce
Instructions
- Add oil to a frying pan and saute pepper slices over medium heat until starting to caramelize and gain a little charred colour. The longer you caramelise, the deeper the flavour will be.
- Add cumin along with the Magic Tomato Sauce and a splash of water, cook for 1 minute.
- Add the baby spinach, distribute evenly among the sauce (add another splash of water if the sauce is getting dry), make 2 gaps in the sauce, then crack in the eggs and season with salt. Turn heat down a little and cover the pan with a lid. Let eggs cook away gently until the white has set and the yolk is still soft.
- Toast bread and pour a little olive oil over it.
- When the eggs are ready, remove the pan from the stove. Garnish with dill. Serve shakshuka in the pan along with toasted bread. Yoghurt and chill sauce would also be a nice side option.
