Herby basil pesto and caper mayo smothered over a crispy parmesan fried egg. Slightly sweet toasted brioche with crunchy radicchio, tomatoes, sliced white onions and a touch of lemon juice.

Sliced white onions and tomatoes are a classic Italian combination and served together as a simple salad. Combined with slightly bitter radicchio and herby pesto caper mayo, this delicious burger has an instant summery feel.

Parmesan Fried Egg Pesto Burger

Italian influenced breakfast burger with parmesan fried egg, basil pesto and caper mayo, lemon, tomato and crunch radicchio leaves.

Ingredients

Scale
  • 1 brioche bun
  • 1 egg
  • 1 heaped Tbsp grated parmesan
  • Sea salt flakes
  • 1 Tbsp mayonnaise
  • 1 Tbsp basil pesto
  • 1 tsp capers, roughly chopped
  • 1/4 small white onion, sliced very fine
  • 2 slices tomato
  • 2 Radicchio leaves

Instructions

  1. Combine mayonnaise, pesto and capers.
  2. Crack egg into a hot pan and fry sunny side up. Sprinkle with parmesan and salt and fry until crispy around the edges. Flip the egg and fry the other side for 5 seconds only. remove from pan.
  3. Place pan back on the heat and lightly toast inside of brioche buns.
  4. Squeeze lemon over radicchio leave. Season tomato slices with salt.
  5. Spread pesto mayo on the inside top and bottom bun. Layer bottom bun with radicchio, tomato, parmesan egg and white onion. Top with the remaining bun and eat immediately.
