Parmesan Fried Egg Pesto Burger

Italian influenced breakfast burger with parmesan fried egg, basil pesto and caper mayo, lemon, tomato and crunch radicchio leaves.

Ingredients

  • 1 brioche bun
  • 1 egg
  • 1 heaped tbsp grated parmesan
  • Sea salt flakes
  • 1 tbsp mayonnaise
  • 1 tbsp basil pesto
  • 1 tsp capers roughly chopped
  • 1/4 small white onion sliced very fine
  • 2 slices tomato
  • 2 radicchio leaves

Instructions

  • Combine mayonnaise, pesto and capers.
  • Crack the egg into a hot pan and fry sunny side up. Sprinkle with parmesan and salt and fry until crispy around the edges. Flip the egg and fry the other side for 5 seconds only. remove from pan and set aside.
  • Place pan back on the heat and lightly toast inside of brioche buns.
  • Squeeze lemon over radicchio leave. Season tomato slices with salt.
  • Spread pesto mayo on the inside top and bottom bun. Layer bottom bun with radicchio, tomato, the fried parmesan egg and wslicedw hite onion. Top with the remaining bun and eat immediately.
