Parmesan Fried Egg Pesto Burger

Italian influenced breakfast burger with parmesan fried egg, basil pesto and caper mayo, lemon, tomato and crunch radicchio leaves.

Ingredients

  • 1 brioche bun
  • 1 egg
  • 1 heaped Tbsp grated parmesan
  • Sea salt flakes
  • 1 Tbsp mayonnaise
  • 1 Tbsp basil pesto
  • 1 tsp capers roughly chopped
  • 1/4 small white onion sliced very fine
  • 2 slices tomato
  • 2 Radicchio leaves

Instructions

  • Combine mayonnaise, pesto and capers.
  • Crack egg into a hot pan and fry sunny side up. Sprinkle with parmesan and salt and fry until crispy around the edges. Flip the egg and fry the other side for 5 seconds only. remove from pan.
  • Place pan back on the heat and lightly toast inside of brioche buns.
  • Squeeze lemon over radicchio leave. Season tomato slices with salt.
  • Spread pesto mayo on the inside top and bottom bun. Layer bottom bun with radicchio, tomato, parmesan egg and white onion. Top with the remaining bun and eat immediately.
