Kick start your weekend with the Mexican inspired Breakfast Egg Tortillas.
Using Flaevors extremely versatile Charred Green Feta Sauce, these Breakfast Egg Tortillas are fresh with lime drenched tomato and cucumber salsa, crunchy bacon bits and topped with your favourite hot sauce.
Make it on one large tortilla or divide ingredients between two smaller ones, the most important thing is that you are using a corn tortilla and not one made with white flour. It’s the flavour of cornmeal that blends so well with the charred green feta sauce and lime salsa.
Charred Green Feta Sauce
This recipe relies on a batch of this sauce pre-prepared in the fridge. You could, of course, make it fresh, however, it will add an extra 50 minutes on to the cooking time which isn’t ideal at breakfast. Consider making the sauce the night before or as a fast substitute crush some feta with olive oil, lemon juice, coriander and lime juice.
Breakfast Egg Tortillas
Ingredients
- 4 small corn tortillas or 2 large
- 4 eggs
- 4 rashes streaky bacon
- 1 tomato
- 1/3 cucumber
- 1/2 red onions
- Lime juice
- 4 Tbsp Charred Green Feta Sauce
- Hot Sauce chipotle or tamarind hot sauce recommended
- Salt + pepper
- Coriander leaves for garnish
Instructions
- Chop tomato, cucumber into small chunks. Dice red onion very fine. Cover with lime juice and season with salt and pepper.
- Crack eggs into a bowl, season with salt and pepper and beat with a fork.
- Heat a frying pan with a tiny splash of oil and start frying bacon until crispy. Remove from pan and crumble into pieces.
- Using the bacon fat from the pan, add eggs and scramble.
- Using the same frying pan, gently heat tortillas for a few seconds on each side.
- To build tortillas: Divide the charred Green Feta Sauce between tortillas. Top with crumbled crispy bacon, lime juice salsa, hot sauce and coriander leaves.
