It’s back to basics with this classy Spiced Ricotta Honey Toast

Simple ingredients are cleverly combined to create this truly divine eating experience. Creamy ricotta spread over crusty toasted bread, topped with honey and garnished with lightly roasted and crushed fennel and coriander. For those who like a little extra kick, a pinch of chilli flakes can also be added.

Ricotta and Honey

A match made in heaven, you will find many recipes combining the two ingredients for dips, desserts, and even toppings for pizza. Ricotta’s thick and creamy texture and mild, slightly nutty taste make it neutral enough to pair with both sweet and savory ingredients.

What type of honey is best

When it comes to wanting delicious sweet syrupy honey, the most easily available brands will do. But just to note, most supermarket brands are pasteurized, with some continuing added sugar which results in a loss of natural nutrients. Raw honey is the purest form of honey, bypassing filtration and holding on to its natural nutrients and health benefits.

Fennel Honey

Fennel Honey, although quite rare, is a real thing. Honeybees are very attracted to the beautiful yellow flowers of the fennel plant and use them for nectar. Fennel seeds are highly aromatic and have many medicinal and therapeutic benefits. So combining fennel seeds and honey for this lovely Spiced Ricotta Honey Toast is a winning combination for taste and health.

Spiced Ricotta Honey Toast

Creamy ricotta spread over crusty toasted bread, topped with honey and garnished with lightly roasted and crushed fennel and coriander. For those who like a little extra kick, a pinch of chilli flakes can also be added.

Ingredients

  • 2 slices crusty white bread or sourdough
  • 4 heaped tablespoons ricotta cheese
  • 1 -2 tbsp Honey
  • ¼ tsp fennel seeds
  • ¼ tsp coriander seeds
  • Pinch chilli flakes

Instructions

  • Dry roast spices in a small frying for 30 seconds or until fragrant. Transfer to a mortar & pestle along with chilli flakes and crush into smaller pieces.
  • Toast bread until golden brown. Spread thickly with ricotta and drizzle with honey. Finish by sprinkling over crushed spice mix.
