Spiced Ricotta Honey Toast
Creamy ricotta spread over crusty toasted bread, topped with honey and garnished with lightly roasted and crushed fennel and coriander. For those who like a little extra kick, a pinch of chilli flakes can also be added.

- 2 slices crusty white bread or sourdough
- 4 heaped tablespoons ricotta cheese
- 1 -2 tbsp honey
- ¼ tsp fennel seeds
- ¼ tsp coriander seeds
- Pinch chilli flakes
Dry roast spices in a small frying for 30 seconds or until fragrant. Transfer to a mortar & pestle along with chilli flakes and crush into smaller pieces.
Toast bread until golden brown. Spread thickly with ricotta and drizzle with honey. Finish by sprinkling over crushed spice mix.
