Recipe: Sweet and Spicy Salmon Burger
A tropical spice-fused salmon burger with zingy lime and a gentle touch of sweet pineapple.
Not like a typical Hawaiin burger with a big chunky pineapple ring, the flavors of this Sweet Spicy Salmon Pineapple Burger have been balanced perfectly so with each bite you taste a bit of spice from sambal, the next bite a bit of sweet from pineapple, the following bite delicious soy and lime.
For the best results, prepare the lime pineapple mayo and salmon patty ingredients at least an hour in advance to let the flavours develop.
Sweet Spicy Salmon Pineapple Burger
Ingredients
Burger Ingredients
- 2 brioche buns
- 400 g salmon fillet
- Rind of 1 lime + juice
- 1 tsp minced ginger
- 2 Tbsp chopped coriander
- 2 Tbsp Sambal Olek + optional extra for buns
- 1 egg white
- 1 tbsp rice flour
- Sea Salt
Lime Pineapple Mayo
- 2 Tbsp mayonnaise
- 1 Tbsp lime juice
- 1 small spring onion chopped fine
- 1 tsp fish sauce
- 3 Tbsp minced pineapple fresh or tinned
- 1 Tsp soy sauce
Salad
- A few crispy lettuce leaves
- 1/4 cucumber
- Sea salt and squeeze lime juice
Instructions
- Combine mayo ingredients.
- Remove skin from salmon and chop fillet into small chunks. Place in a bowl along with minced ginger, sambal oelek, lime rind, coriander, egg white and rice flour. Season well with sea salt and carefully combine all the ingredients.
- Divide salmon in two and form into burger patties. Heat oil in a frying pan and gently fry salmon on each side for a couple of minutes until cooked through. Be careful not to overcook or salmon will become very dry. Remove from pan and immediately squeeze lime juice over each patty.
- Slice lettuce and cucumber into thin strips. Season with salt and a little lime juice.
- Toast brioche buns under the grill.
- If you like a very spicy burger add some more sambal oelek on the bottom inside bun. Next layer cucumber salad, then salmon patty and top with lime pineapple mayo.
