Instructions
Combine mayo ingredients.
Remove skin from salmon and chop fillet into small chunks. Place in a bowl along with minced ginger, sambal oelek, lime rind, coriander, egg white and rice flour. Season well with sea salt and carefully combine all the ingredients.
Divide salmon in two and form into burger patties. Heat oil in a frying pan and gently fry salmon on each side for a couple of minutes until cooked through. Be careful not to overcook or salmon will become very dry. Remove from pan and immediately squeeze lime juice over each patty.
Slice lettuce and cucumber into thin strips. Season with salt and a little lime juice.
Toast brioche buns under the grill.
If you like a very spicy burger add some more sambal oelek on the bottom inside bun. Next layer cucumber salad, then salmon patty and top with lime pineapple mayo.
Notes
Prepare mayo and salmon burger patties in advance and rest in the fridge for 1 hour so the flavours have time to develop.
