Charred Green Feta Sauce
Ingredients
- 1 large green pepper
- 25 gm coriander including stems
- 15 g mint leaves
- 200 g feta drained
- ½ tsp red wine vinegar
- ½ tsp sugar
- Juice ½ lime
- 1/2 tsp cumin powder
- ½ garlic clove crushed
- 3 tbsp olive oil
- 1 tbsp water
Instructions
- Preheat oven to 220°C. Rub pepper in oil and roast for 30 minutes, or until charred and blackened on the outside.
- Place pepper in a bowl and cover for 10 minutes so juices are released. After this time drain and reserve the pepper juice. Peel away the charred outer skin and clean away the seeds inside. Cut pepper into large chunks.
- Combine chopped pepper, pepper juice and all other ingredients in a food processor and blend until smooth. Taste and season with salt and pepper as needed.
- Transfer to a bowl or container and refrigerate until ready to use.
