Parmesan Fried Egg Pesto Burger
Ingredients
- 1 brioche bun
- 1 egg
- 1 heaped Tbsp grated parmesan
- Sea salt flakes
- 1 Tbsp mayonnaise
- 1 Tbsp basil pesto
- 1 tsp capers roughly chopped
- 1/4 small white onion sliced very fine
- 2 slices tomato
- 2 Radicchio leaves
Instructions
- Combine mayonnaise, pesto and capers.
- Crack egg into a hot pan and fry sunny side up. Sprinkle with parmesan and salt and fry until crispy around the edges. Flip the egg and fry the other side for 5 seconds only. remove from pan.
- Place pan back on the heat and lightly toast inside of brioche buns.
- Squeeze lemon over radicchio leave. Season tomato slices with salt.
- Spread pesto mayo on the inside top and bottom bun. Layer bottom bun with radicchio, tomato, parmesan egg and white onion. Top with the remaining bun and eat immediately.
