The Ultimate Grilled Cheese Sandwich with Bacon Jam
This grilled cheese and bacon jam sandwich could be the best toastie you’ve ever made. It features layers of melted cheese with a generous spread of homemade bacon jam. It’s salty, sweet, sticky and very indulgent. Serve it for brunch, lunch or dinner – and definitely alongside a glass of red or white wine.
What Cheese Goes Best With Bacon Jam
- Mature Cheddar – for sharpness and that familiar comforting flavour
- Gruyère – for a nutty, melty richness that pairs beautifully with sweet and savoury elements.
Both cheeses melt smoothly and balance the intensity of the bacon jam without overpowering it.

What Is Bacon Jam Made Of?
Bacon jam recipes vary, but this version is a standout:
- Red onions, slowly caramelised
- Crispy bacon
- Balsamic vinegar
- Black coffee
- A splash of brandy
The result? A savoury-sweet spread that’s thick, glossy, and complex – almost like a chutney or quince paste for grown-ups. It adds instant flavour to grilled cheese, burgers, or even crostini. You will need to make the bacon jam ahead of time according to the recipe instructions here on Flaevor: Bacon Jam with Red Onion Brandy
