Egg Bacon Blue Cheese Sandwich
Ingredients
- 2 pieces of crusty white bread
- 1 egg
- 4 chestnut mushrooms sliced
- 60g blue cheese
- 2 – 3 heaped tbsp Bacon Jam with Red Onion Brandy recipe here
- Large handful of baby leaf spinach leaves
- Butter
- Sea salt flakes
Instructions
- Heat a little butter in a frying pan and sautee mushrooms with a pinch of salt until soft. Rewmove and set aside.
- Using the same pan, add the spinach leaves with a tiny pinch of salt. Stir around pan until wilted. Remove and set aside.
- Wipe the frying pan clean and add another dash of butter. Fry Egg sunny-side up until crispy around the edges but the yolk still gooey. Season with salt.
- Toast bread and spread each side with butter. Layer with bacon jam, spinach, blue cheese, mushrooms, and fried egg. Top with remaining toasted bread.
