Recipe: Egg Bacon Blue Cheese Sandwich
An explosive combination of salty, sweet umami flavours and various layers of texture
As far as sandwiches go, this truly is a gourmet eating experience. Starting with a homemade bacon jam that is sweet, salty, and soaked with a little brandy, this wonderful and versatile condiment is offset by the distinctive taste of sharp, creamy, and salty blue cheese.

Fried mushrooms give this sandwich its meaty base whilst spinach plays its role as the harmonious green side-kick to a crispy-but-gooey fried egg. All this goodness is sandwiched between crusty toasted bread making each mouthful more pleasurable than the last.
How to make Bacon Jam
You will need to make the bacon jam ahead of time, but don’t fear, it’s definitely worth the effort as this delicious condiment can be served in many ways such as a side to steak, burgers, cheeseboards, with pancakes and eggs or as a dip to fries and wedges. No doubt once you have a jar on the fridge, you will have no problem finding ways to eat it.

Egg Bacon Blue Cheese Sandwich
Ingredients
- 2 pieces of crusty white bread
- 1 egg
- 4 chestnut mushrooms sliced
- 60 g blue cheese
- 2 - 3 heaped tbsp Bacon Jam with Red Onion Brandy recipe here
- Large handful of baby leaf spinach leaves
- Butter
- Sea salt flakes
Instructions
- Heat a little butter in a frying pan and add spinach, moving around pan until wilted. Remove and set aside.
- Wipe the frying pan clean and add another dash of butter. Fry Egg sunny-side up until crispy around the edges but the yolk still gooey. Season with salt.
- Toast bread and spread each side with butter. Layer with bacon jam, spinach, blue cheese, mushroom and fried egg. Top with remaining toasted bread.
