Egg Bacon Blue Cheese Sandwich
Gourmet sandwich with sweet-salty bacon jam, creamy blue cheese, fried mushrooms, spinach and a crispy gooey fried egg

- 2 pieces of crusty white bread
- 1 egg
- 4 chestnut mushrooms sliced
- 60g blue cheese
- 2 - 3 heaped tbsp Bacon Jam with Red Onion Brandy recipe here
- Large handful of baby leaf spinach leaves
- Butter
- Sea salt flakes
Heat a little butter in a frying pan and sautee mushrooms with a pinch of salt until soft. Rewmove and set aside.
Using the same pan, add the spinach leaves with a tiny pinch of salt. Stir around pan until wilted. Remove and set aside.
Wipe the frying pan clean and add another dash of butter. Fry Egg sunny-side up until crispy around the edges but the yolk still gooey. Season with salt.
Toast bread and spread each side with butter. Layer with bacon jam, spinach, blue cheese, mushrooms, and fried egg. Top with remaining toasted bread.
