Egg Bacon Blue Cheese Sandwich

Gourmet sandwich with sweet-salty bacon jam, creamy blue cheese, fried mushrooms, spinach and a crispy gooey fried egg

  • Heat a little butter in a frying pan and sautee mushrooms with a pinch of salt until soft. Rewmove and set aside.
  • Using the same pan, add the spinach leaves with a tiny pinch of salt. Stir around pan until wilted. Remove and set aside.
  • Wipe the frying pan clean and add another dash of butter. Fry Egg sunny-side up until crispy around the edges but the yolk still gooey. Season with salt.
  • Toast bread and spread each side with butter. Layer with bacon jam, spinach, blue cheese, mushrooms, and fried egg. Top with remaining toasted bread.
