Recipe: Charred Green Feta Sauce
Charred Green Feta Sauce
Ingredients
- 1 large green pepper
- 25g fresh coriander including stems
- 15g fresh mint leaves
- 200g feta drained
- ½ tsp red wine vinegar
- ½ tsp sugar
- Juice ½ lime
- 1/2 tsp ground cumin
- ½ garlic clove crushed
- 3 tbsp olive oil
- 1 tbsp water
Instructions
- Preheat oven to 220°C. Rub the pepper with oil and roast for 40 minutes, or until charred and blackened on the outside.
- Transfer the pepper to a bowl and cover for 10 minutes so juices are released. After this time dra,in and reserve the pepper juice. Peel away the charred outer skin and clean away the seeds inside. Cut pepper into large chunks.
- Combine chopped pepper, pepper juice and all other ingredients in a food processor and blend until smooth. Taste and season with salt and pepper as needed.
- Transfer feta sauce to a bowl or container and refrigerate until ready to use.
