
Gourmet Egg, Bacon & Blue Cheese Sandwich with Homemade Bacon Jam
This decadent sandwich is layered with sweet, salty and savoury ingredients and contains a generous spoonful of homemade bacon jam, which is sweet and savoury with a hint of brandy. It is also filled with tangy blue cheese, buttery sautéed mushrooms, fresh baby spinach and a crispy fried egg with a runny yolk. Posh!
How to Make Sweet & Savoury Bacon Jam
Bacon jam is the star of this recipe. While it does require some preparation, it is very satisfying to have a jar of it in the fridge, where it will keep for many weeks. Made with bacon, caramelised red onion, butter, sugar, balsamic vinegar, coffee and brandy, this sticky condiment can be spread on sandwiches, burgers, pancakes and much more.

Egg Bacon Blue Cheese Sandwich
Ingredients
- 2 pieces of crusty white bread
- 1 egg
- 4 chestnut mushrooms, sliced
- 60g blue cheese
- 2 – 3 heaped tbsp Bacon Jam with Red Onion Brandy, recipe here
- Large handful of baby leaf spinach leaves
- Butter
- Sea salt flakes
Instructions
- Heat a little butter in a frying pan and sauté mushrooms with a pinch of salt until soft. Remove and set aside.
- Using the same pan, add the spinach leaves with a tiny pinch of salt. Stir around pan until wilted. Remove and set aside.
- Wipe the frying pan clean and add another dash of butter. Fry the egg sunny-side up until crispy around the edges but the yolk still gooey. Season with salt.
- Toast bread and spread each slice with butter. Layer with bacon jam, spinach, blue cheese, mushrooms, and fried egg. Top with remaining toasted bread.
