
Feta and Cheddar Toastie Inspired by Greek Saganaki
A delicious toastie inspired by saganaki, a traditional Greek dish of pan-fried cheese served as part of a meze. The term ‘saganaki’ refers to the small, two-handled pan in which the cheese is cooked. In some modern variations, honey is drizzled over the fried cheese to emphasise the delicious sweet-savoury contrast. This recipe takes that same idea and puts it into a toastie with a mix of salty feta and melting cheddar, finished with a drizzle of black lime hot honey for a spicy citrus twist.

Ingredients
- 2 slices sourdough bread
- Equal parts feta and cheddar cheese
- Butter
- Black Lime Hot Honey, Recipe on flaevor click here
Instructions
- The amount of cheese you use will depend on the size of your bread. Crumble and grate equal parts feta and cheddar to create a generously packed filling for the toastie.
- Butter one side of each piece of bread. Turn the bread over and press the feta and cheddar cheese mixture into a mound on the unbuttered side. Top with the other slice of bread, buttered side up.
- Heat a frying pan over low – medium heat. Place the toastie buttered side down in the pan and cook until golden brown and the cheese begins to melt. Flip and cook the other side until golden and the cheese is fully melted.
- Remove the toastie from the pan. Cut it into three pieces and drizzle with black lime hot honey.
