Classic pairings of apple and pork get a boost of springtime joy
It’s fair to say that the sauce is the star of this Pork Chop Celeriac Remoulade and Apple Date Sauce. Of course, a buttered pork chop is undeniably succulent and the ‘draw’ of the recipe, but this intensely thick, sweet and savoury apple-date sauce adds an element of seduction with its almost caramel-like flavour.

Remoulade’s earthy flavour makes it a refreshing alternative to potatoes or pasta, and this version has a bit more spice than the original. Soy sauce and green chilli add a bit of spice and an Asian flavour that complements the sweetness of the apple sauce.
Sweet and Savoury Apple Date Sauce
A winning combination of apples, Medjool dates, ginger and a touch of butter. Oven-roasted apples add a rich caramel flavour that develops when mixed with creamy, fudge-like Medjool dates. Recipe: Pork Chop, Celeriac Remoulade and Apple Date Sauce
Pork Chop, Celeriac Remoulade and Apple Date Sauce
Ingredients
- 2 pork chops
- Salt and pepper
- 1 garlic clove crushed or 1/2 tsp garlic powder
- 1 tbsp butter
- 1 x Sweet and Savoury Apple Date Sauce recipe click here
Celeriac Remoulade
- 250g peeled celeriac root
- 2 tbsp lemon juice
- 2 heaped tbsp of good mayonnaise
- 1 tbsp of smooth Dijon mustard
- 1/2 small green chilli minced
- 2 tbsp of chopped parsley chopped fine
- 1 tsp soy sauce
- 1 large spring onion sliced thinly
Instructions

- For the celeriac remoulade: Grate the celeriac root on the large side of a box grater. Transfer to a bowl, squeeze over lemon juice and mix well.
- Mix mayonnaise, Dijon, green chilli, soy sauce, parsley and spring onion. Stir in the grated celeriac. Season to taste with salt and pepper to taste.
- Pork chops: Rub pork chops with garlic and salt on both sides. Heat a little oil in a frying pan and fry the pork chops until nicely browned, about 2-3 minutes. Turn over, add butter to the pan and while the other side is cooking, continue to baste the pork with the melted butter for a further 1-2 minutes. Remove the chop from the pan and leave to rest for 5 minutes.
- Add another teaspoon of butter to the frying pan and combine it with the pork cooking juices to make a lovely butter sauce.
- Serve: Divide celeriac remoulade between plates, place pork chop alongside it, and a large spoon of apple date sauce.
