Not only will eating this burger put a smile on your face, but it’s likely to give you good eating memories for the rest of the day. Juicy miso and tomato onions with a crispy fried egg and a brioche bun covered in melted cheese, what could be a better breakfast?
Miso Onions
Add an instant salty and sweet umami flavour to any burger or sandwich with miso onions. Slowly cooked in oil, butter, soy, miso and honey, they fit perfectly alongside a crispy fried salty egg and slightly sweet brioche bun. You could also keep a batch in the fridge to use at a later date on warm crusty buttered toast or eaten with rice.

Miso Egg Breakfast Burger
Ingredients
- 1 brioche bun + butter for spreading
- 1 egg
- A slug of oil for frying
- 1 Tbsp butter for frying
- 1 small onion
- 1 small tomato
- 1 large lettuce leaf
- Salt and pepper
- 1/2 red birds-eye chilli
- 1 tsp white miso
- 1 tsp soy sauce
- 1 tsp honey
- Cheddar or Gouda cheese
Instructions
- Heat a frying pan with oil and butter. Fry onions and tomato in oil over medium heat for 5 minutes. To help soften the onions, add a splash of water and continue to cook another few minutes.
- Combine miso, soy, honey along with another small splash of water and pour over onions. Cook until sauce is thick and coating the onions and tomatoes nicely. Remove from the pan and set aside.
- Place brioche bun halves under the grill and brown slightly. Butter each side, then on the top half bun cover with slices of cheddar cheese. Return to the grill until the cheese has melted.
- In a clean frying pan, heat some oil and fry egg, sunny side up, until crispy. Season with salt.
- Assemble breakfast burger: On the bottom bun layer lettuce, miso tomato onions, fried egg and finish with cheesy brioche bun top.
