Recipe: Fennel Celery Apple and Coriander Salad
A Refreshing crunchy salad with a hint of dried chilli.
Shaved fennel and celery, grated apple, dried chilli and coriander make this salad the perfect flavour combination to serve alongside slow-roasted or pan-fried pork, poached chicken, salmon fillet, a tomato-based pasta dish or stacked into a sandwich or burger.
Fennel Celery Apple and Coriander Salad
Crunchy refreshing salad perfect for sandwiches or served alongside meat and vegetables.
Servings: 2 - 4
Ingredients
- 1 large fennel bulb
- 1 large red apple
- 2 sticks celery
- 1 Tbsp mayonnaise
- 1 Tbsp Olive Oil
- 1 – 2 Tbsp Lemon juice
- 1/4 tsp dried chilli flakes
- Salt and pepper
- large handful chopped coriander + a couple of extra leaves for garnish
Instructions
- Combine all dressing ingredients into a bowl, starting with just one tablespoon of lemon juice.
- Cut fennel bulb in half lengthways and use a mandolin to shave the fennel into very thin slices. If you don’t have a mandolin you can use a sharp knife
- Peel and grate the apple. Then use the same peeler to strip celery into long thin pieces lengthways.
- Combine fennel, celery, apple, coriander and salad dressing. Season with salt and pepper. Taste to see if the second tablespoon of lemon juice needs to be added. When it tastes to your liking, sprinkle with remaining coriander leaves. Best served chilled.
