An Egg Bacon Cheese Burger smothered in American mustard-mayo pickle and juicy beer-soaked fried onions. The ultimate weekend breakfast or brunch, lunch or dinner or just anytime you fancy a kick-ass burger.
Why you should use a brioche bun
The best choice of bun for a burger due to the light fluffy texture. It allows the crispy bacon, fried egg and crunchy salad to shine through. The slightly sweet taste of the bun also compliments the salty meat and tangy mustard mayo perfectly, creating a great balance of the overall combined flavours.
Beer-Soaked Onions
Why beer-soaked onions? Because it tenderises the onions quickly plus it makes you feel just a little more excited about frying onions.
Gouda Cheese
Gouda cheese comes from Holland and has a wonderful creamy taste that fits very well when melted onto salty meats. If you cannot find Gouda then cheddar would be a great substitute.
Fry your egg very crispy
Heat a frying pan with a very generous amount of oil. When hot, crack the egg into the oil and let it sizzle away. You will see the white of the egg rising and forming little bubbles. Do not flip the egg over; the yolk needs to be runny. Always put salt on your fried egg.
What is American-Mustard?
American Mustard is famous for its bright yellow colour which is created through the use of turmeric. It has a milder flavour compared to classic English and German mustards. The taste of American Mustard is normally associated with hotdogs, cheeseburgers and New York Deli-style sandwiches. It has a lightly sweet, tangy and vinegary flavour. Absolutely delicious!

Recipe: Egg Bacon Cheese Burger
Egg Bacon Cheese Burger
Ingredients
- 1 brioche burger bun
- 1 egg
- 3 strips smokey bacon
- 1 slice Gouda cheese
- 3 slices tomato
- 2 lettuce leaves
- 1/2 Squeeze lemon juice
- Sea salt flakes
American Mustard-Mayo
- 1 pickled cucumber chopped into small pieces
- 2 Tbsp mayonnaise
- 1 Tbsp American Mustard
Beer Onions
- 1 Small white onion sliced
- 1 tsp soy sauce
- 125ml beer
- Sea salt flakes
Instructions
- Combine mayonnaise, American mustard and chopped pickled cucumber. Set aside.
- Fry onions in butter for 5 minutes. Add soy sauce and beer, then continue to cook down over medium-low heat until liquid has evaporated and onions are juicy and soft. Season with a little salt if needed.
- Fry bacon until crispy. Keep warm by wrapping in aluminum foil and reserve bacon fat for frying the egg.
- Toast brioche buns and spread both sides with butter. Next layer cheese on the bottom half and grill until melted.
- Whilst grilling, fry the egg until crispy around the edges. Season with salt.
- Lightly squeeze lemon juice over lettuce and tomatoes and season lightly with salt.
- Build your burger: Start with placing lettuce over the melted cheese followed by tomato, egg, bacon, beer onions and finish with mustard-mayo-pickle.
