
Mexican-Inspired Breakfast Tacos with Eggs and Bacon
Kick-start your weekend with these Mexican-inspired breakfast tacos, which are layered with scrambled eggs, crispy bacon, a lime-drenched tomato and cucumber salsa, and a generous helping of charred green feta sauce. Served on warm corn tortillas and finished with your favourite hot sauce, they strike the perfect balance of fresh, smoky, creamy and spicy flavours.
You can either build them on one large tortilla or divide the filling between smaller ones, but the most important rule is this: use corn tortillas, not flour. The natural sweetness of the corn complements the charred green feta sauce and zesty lime salsa beautifully, creating a vibrant, bold and satisfying breakfast.
Make the Charred Green Feta Sauce Ahead of Time
This recipe relies on having a batch of sauce prepared in advance and stored in the fridge. You could, of course, make the sauce fresh, but this would add an extra 50 minutes to the cooking time, which isn’t ideal for breakfast. Consider making the sauce the night before, or for a quicker alternative, simply mix some feta with olive oil, lemon juice, coriander and lime juice.

Egg and Bacon Breakfast Tacos with Charred Green Feta Sauce
Ingredients
- 4 small corn tortillas or 2 large
- 4 eggs
- 4 rashes streaky bacon
- 1 tomato
- 1/3 cucumber
- 1/2 red onions
- Lime juice
- 4 tbsp Charred Green Feta Sauce
- Hot Sauce chipotle or tamarind hot sauce recommended
- Salt + pepper
- Coriander leaves for garnish
Instructions
- Chop tomato, cucumber into small chunks. Dice red onion very fine. Cover with lime juice and season with salt and pepper.
- Crack eggs into a bowl, season with salt and pepper and beat with a fork.
- Heat a frying pan with a tiny splash of oil and start frying bacon until crispy. Remove from pan and crumble into pieces.
- Using the bacon fat from the pan, add eggs and scramble.
- Using the same frying pan, gently heat tortillas for a few seconds on each side.
- To build tortillas: Divide the Charred Green Feta Sauce between tortillas. Top with crumbled crispy bacon, lime juice salsa, hot sauce and coriander leaves.
