Spicy Reuben Sandwich
A tongue-tingling take on the classic New York deli, the Spicy Reuben sandwich features Korean chilli pickled mayo and crispy sourdough bread.

- 200g Pastrami
- 2 slices sourdough bread
- butter
- 125g or 1/2 cup sauerkraut
- 1 garlic clove crushed
- 2 slices Swiss Cheese
- 1 large pickle, sliced
- 2 tbsp Korean Chilli Pickle Mayo
Heat a sandwich press or a frying pan on the stovetop. Combine all Korean Chilli Oickle Mayo ingredients and set aside (recipe here) Butter both pieces of bread. Turn the bread over and on the non-buttered side spread each side with Korean Chilli Pickled Mayo. Now start the layering: Start with a slice of cheese, followed by the pastrami, then the sauerkraut, pickles and finally the other slice of cheese.
Place the second slice of bread on top, buttered side up, and toast in a pan or sandwich press until golden brown.
