Peanut Curry Sauce

Salty and sweet peanut curry satay sauce served as a dip alongside meat and vegetables, used as a sauce for noodles or spread into sandwiches and burgers

Ingredients

  • ½ lime juiced
  • 1 tsp clear honey
  • 1 tbsp soy sauce
  • 1 tbsp curry powder
  • 3 tbsp smooth peanut butter
  • 165ml can coconut milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chilli powder

Instructions

  • Mix the lime juice, honey, soy sauce, curry powder, garlic, onion and chilli powder and peanut butter in a small bowl. Add a splash of water if it’s too stiff. Transfer to a small pan with the coconut milk, and heat gently for 5 mins stirring continually, until combined.
