Cashew Sesame Lime Coleslaw
This zingy salad with sesame and lime dressing is a light energizing side to pair with fish, meat or vegetable dishes.

- 220g thinly shredded red cabbage
- 2 large spring onions chopped fine
- 1 large carrot grated
- 14g coriander roughly chopped
- 90g roughly chopped cashew nuts
- Sea salt flakes
- 2 tsp toasted sesame oil
- 1 tsp vegetable oil
- 2 tbsp lime juice
- Salt and pepper
Combine: Add all ingredients to a large bowl and toss well to combine.
Season: Taste and adjust with salt and pepper as needed.
Serve: Enjoy immediately, or refrigerate until ready to serve.
