Cashew Sesame Lime Coleslaw

This zingy salad with sesame and lime dressing is a light energizing side to pair with fish, meat or vegetable dishes.

Ingredients

  • 220g thinly shredded red cabbage
  • 2 large spring onions chopped fine
  • 1 large carrot grated
  • 14g coriander roughly chopped
  • 90g roughly chopped cashew nuts
  • Sea salt flakes
  • 2 tsp toasted sesame oil
  • 1 tsp vegetable oil
  • 2 tbsp lime juice
  • Salt and pepper

Instructions

  • Combine all ingredients in a large bowl and mix together well. Taste seasoning and adjust with salt and pepper as needed.
