Za’atar Spice Blend

Za’atar is a Middle Eastern spice blend with a history of use dating back to medieval times. Nowadays, a typical blend for za’atar consists of cumin, dried thyme, oregano, marjoram, sumac, toasted sesame seeds and salt.

Ingredients

Scale
  • 2 tbsp cumin seeds
  • 2 tbsp toasted sesame seeds
  • 2 tbsp dried oregano
  • 2 tbsp dried thyme
  • 2 tbsp dried marjoram
  • 2 tbsp sumac
  • 1 tsp sea salt flakes

 

Instructions

  1. dry roast cumin seeds until fragrant. Transfer to a pestle & mortar or small blender along with sea salt flakes and grind into a powder.
  2. Combine salt and cumin with all other ingredients. Transfer to an airtight container and keep in a cool dark cupboard. Will last up to 2 months before the flavour starts to fade.

Notes

Spice mixes are always best used within 1 – 2 months for maxiumum flavour and freshness so avoid making very large batches that cannot be used in time.
