Servings: 1 cup
- 250ml full fat cows milk or oat milk
- 1 tsp maple syrup
- 3 green cardamom pods
- 1/4 tsp cinnamon
- 2 cloves
- 3 black peppercorns
- ½ tsp grated ginger or dried ginger
Place the cardamom pods, cloves and peppercorns into a pestle & mortar and bash a few times until they break apart (do not turn into a powder, keep as large chunks). This will help release oils and flavour.
Pour the milk into a small saucepan and add bashed cardamom, cloves, and peppercorns along with ginger and cinnamon. Slowly bring to a simmer and allow the milk to gently cook for 5 minutes or until hot (do not bring it to a boil). Remove from the heat, place a lid on top, and let it sit and stew for a further 5 minutes.
Strain milk and stir through maple syrup. Transfer to a mug and sprinkle with a little extra cinnamon and some dried rose petals if you wish.
