Pork Prawn Lychee Burger
Pork and shrimp pair perfectly with the wonderfully fragrant flavor of lychee. Melted cheddar and zesty lime juice slaw provide a wonderful balance that leaves a tingle on the tongue.

- 1 brioche bun
- 2 whole lychees from the tin, chopped fine
- 75g raw prawns
- 75g minced pork
- 1 tsp soy sauce
- Sea salt flakes
- A few slices of Cheddar cheese
- Lychee ketchup recipe here
Salad
- 2 lettuce leaves cut into slices
- 1 tbsp grated carrot
- 1/2 spring onion finely sliced
- Coriander leaves
- Lime juice
- Sea salt flakes
Prepare the burger patty: combine ground pork, shrimp, lychee, soy and salt in a small bowl and mix gently and evenly. Form a patty a little larger than the size of your bun.
Heat a small skillet with a little oil and fry until nicely browned. Flip the patty over and immediately top the browned side with cheddar slices.
Cover the pan with a lid and turn down the heat. Fry for approximately 1 minute or until the cheese has melted and the patties are cooked through.
Mix salad ingredients with a squeeze of lime juice and salt.
Toast the insides of the brioche buns.
Assemble the burger: Spread both bun insides generously with lychee ketchup. Top the bottom half of the bun with salad, followed by the pork-prawn patty. Top with remaining brioche bun.
