Apple Date Coconut Porridge with Toasted Almonds
A beautiful bowl of porridge made from thick and creamy coconut milk and topped with a sweet homemade apple and date sauce. Flaked almonds add the perfect final crunch.

- 50g porridge oats
- 175ml coconut milk
- 175ml water
- Pinch of salt
Put 50g of oatmeal in a saucepan, add the coconut milk and water and sprinkle with a pinch of salt. Bring to the boil and simmer for 4-5 minutes, stirring occasionally and making sure it doesn't stick to the bottom of the pan.
While the porridge is cooking, toast the almond flakes in a dry non-stick frying pan.
Pour the porridge into a bowl and add a little cold milk. Drizzle with a little maple syrup. Garnish with apple-date sauce, toasted almonds and dried flowers.
