Sweet and Savoury Apple Date Sauce

A thick caramel-like sauce made with roasted apple, Medjool dates and ginger serves as a condiment on both sweet and savoury dishes

Ingredients

  • 3 apples
  • 1 tbsp butter
  • 150g Meedjool dates
  • 2 tsp freshly grated ginger
  • 150200ml date liquid
  • 2 tsp apple ciders vinegar
  • Good pinch sea salt flakes

Instructions

  1. Heat oven to 200°C.
  2. Chop apples into small cubes and discard core. Heat 1 tbsp butter in a small roasting tin and when melted toss apple cubes around to coat.
  3. Roast for 25 – 30 minutes or until sticky and nicely browned / caramelised on the outside. They should still be soft and juicy on the inside.
  4. Whilst apples roast, soak Meedjool dates in boiling water for 10 minutes. Drain dates and reserve the soaking water. Remove date seeds and roughly chop into smaller chunks so they are easier to blend.
  5. Combine roasted apples, dates, ginger, salt and vinegar in a blender. Pour in 150ml reserved date soaking water and blend until smooth. If your sauce is too thick, then add splashes of date water until the right consistency is achieved and the sauce blends to a thick smooth consistency. This is a thick jam like sauce and not runny so don’t add too much and you can’t go back!
  6. Transfer to a jar and keep in the fridge until needed.
