Spiced Ricotta Honey Toast

Creamy ricotta spread over crusty toasted bread, topped with honey and garnished with lightly roasted and crushed fennel and coriander. For those who like a little extra kick, a pinch of chilli flakes can also be added.

Ingredients

  • 2 slices crusty white bread or sourdough
  • 4 heaped tablespoons ricotta cheese
  • 12 tbsp Honey
  • ¼ tsp fennel seeds
  • ¼ tsp coriander seeds
  • Pinch chilli flakes

Instructions

  1. Dry roast spices in a small frying for 30 seconds or until fragrant. Transfer to a mortar & pestle along with chilli flakes and crush into smaller pieces.
  2. Toast bread until golden brown. Spread thickly with ricotta and drizzle with honey. Finish by sprinkling over crushed spice mix.
