Pork Chop, Celeriac Remoulade and Apple Date Sauce

Celeriac Remoulade

  • 250g peeled celeriac root
  • 2 tbsp lemon juice
  • 2 heaped tbsp of good mayonnaise
  • 1 tbsp of smooth Dijon mustard
  • 1/2 small green chilli, minced
  • 2 tbsp of chopped parsley, chopped fine
  • 1 tsp soy sauce
  • 1 large spring onion, sliced thinly

 

 

Instructions

  1. Prepare Sweet and Savoury Apple Date Sauce as per recipe instructions
  2. For the celeriac remoulade: Grate celeriac root on the large side of a box grater. Transfer to a bowl, squeeze over lemon juice and mix well.
  3. Combine mayonnaise, dijon, green chilli, soy sauce, parsley and spring onion. Stir through grated celeriac. Taste and season with salt and pepper as needed.
  4. Pork chop: Rub pork chops with garlic and season both sides with salt. Heat some oil in a frying pan and fry pork chop until nicely browned, approx. 2-3 minutes. Flip, add butter to the pan and as the other side is cooking, baste the pork continuously with the melted butter for another 1 – 2 minutes. Remove the pork chop from the pan and allow to rest for 5 minutes.
  5. Add another teaspoon of butter to the frying pan and combine it with the pork cooking juices to make a lovely butter sauce.
  6. Serve: Divide celeriac remoulade between plates, place pork chop alongside it, and a large spoon of apple date sauce.

Serving suggestion: Goes very nicely with a glass of whiskey or bourbon
