Ingredients

Scale
  • 300g flour
  • Water
  • Pinch of salt (optional)

Instructions

  1. Place flour and salt in a bowl. Add small amounts of water to the flour, mixing to form a dough. Do this slowly until it’s nice and firm. If you add too much water and it becomes wet just add more flour to bring it back.
  2. Knead for 1 minute until dough is soft and well combined. Wrap in cling film and let it sit for 5 – 10 minutes.
  3. Divide mixture into 4 and roll into balls. On a non-stick work surface roll balls out as thin as you can. it’s ok if they are not perfect circles. Pick up flatbread and gently stretch the dough from left to right, turning it in a circle to stretch evenly.
  4. Add flatbreads one at a time to a hot dry frying pan (no oil or butter) and cook each side for 30 seconds – 1 minute. They will rise and puff up with little air pockets and flatten down again once off the heat.
  5. Keep flatbreads warm by covering with foil until ready to use.
